These savory roasted stuffed dates with goat cheese and prosciutto are the perfect sweet and salty appetizer. They are quick, easy, and always a crowd-pleaser.

  • 1620 Medjool dates
  • 4 oz goat cheese, softened
  • 810 thin slices prosciutto
  • Honey or balsamic glaze for drizzling (optional)
  • Fresh rosemary or thyme for garnish (optional)
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prep the dates: Use a small paring knife to make a slit along one side of each date, from top to bottom, creating a pocket. Remove the pit.
  3. Stuff the dates: Fill each date cavity with about 1 to 1.5 teaspoons of softened goat cheese.
  4. Wrap with prosciutto: Cut each slice of prosciutto in half lengthwise. Wrap one half-slice around the middle of each stuffed date, overlapping slightly. Place seam-side down on the prepared baking sheet.
  5. Roast: Bake for 8-12 minutes, until prosciutto is crispy and dates are puffed and glossy.
  6. Finish and serve: Let cool for 2-3 minutes, then transfer to a platter. Drizzle with honey or balsamic glaze, sprinkle with fresh herbs and flaky sea salt. Serve warm.

Notes

The dates will be very hot when they come out of the oven. Warn guests to let them cool for a minute before eating. For make-ahead, assemble dates and refrigerate for up to 8 hours before baking; add 1-2 minutes to baking time.
