  • 1 medium yellow onion, finely chopped
  • 1 small green bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 1 cup (240 ml) tomato sauce
  • 1/2 cup (120 ml) ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp apple cider vinegar
  • 1 tbsp brown sugar (packed light)
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper to taste
  • 68 burger buns, soft and slightly toasted

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook for 6-8 minutes, breaking it apart with a spoon until browned and no longer pink. Drain excess fat if necessary.
  2. In the same skillet, add the finely chopped onion and diced green bell pepper. Cook for 4-5 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Transfer the browned beef and sautéed vegetables to the slow cooker. Stir in tomato sauce, ketchup, Dijon mustard, Worcestershire sauce, apple cider vinegar, brown sugar, chili powder, smoked paprika, salt, and pepper.
  4. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, stirring once or twice during cooking if possible.
  5. Before serving, taste and adjust seasoning if needed.
  6. Spoon generous portions onto toasted burger buns. Optionally, toast buns in butter before serving. Serve with pickles or simple slaw if desired.

Browning the meat adds depth of flavor and reduces greasiness. Drain excess fat carefully to avoid soggy sloppy joes. Use 80/20 ground beef for juiciness. Adjust seasoning before serving.
