Tender Venison Shank Tacos with Crunchy Apple Slaw

  • 2 venison shanks (about 1.5 to 2 pounds total)
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup beef or venison broth (low-sodium)
  • 1/2 cup fresh orange juice (about 1 orange)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 cups green cabbage, thinly shredded
  • 1 large Granny Smith apple, julienned or thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime (about 2 tablespoons)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 8 to 10 small corn tortillas
  • Lime wedges for serving
  • Extra cilantro for garnish
  • Sliced radishes or avocado (optional)

Instructions

  1. Pat the venison shanks dry with paper towels and season generously with salt and black pepper. Heat 2 tablespoons olive oil in a large Dutch oven over medium-high heat. Sear the shanks for 4 to 5 minutes per side until deeply browned. Transfer to a plate and set aside.
  2. Reduce heat to medium. Add the diced onion to the pot and cook for about 5 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant. Pour in the beef broth, orange juice, and apple cider vinegar, stirring to combine. Add cumin, smoked paprika, oregano, and bay leaf. Bring to a gentle simmer.
  3. Return the seared shanks to the pot, nestling them into the liquid. Cover and transfer to a preheated 325°F oven. Braise for 2.5 to 3 hours until the meat is fork-tender and pulling away from the bone.
  4. Remove the pot from the oven and transfer the shanks to a cutting board. Let rest for 5 minutes. Use two forks to shred the meat, discarding any gristle or silver skin. Strain the braising liquid through a fine-mesh sieve, discarding solids. Return the shredded meat to the pot and add about 1/2 cup of the strained liquid to keep it moist. Keep warm.
  5. While the meat rests, toss the shredded cabbage with 1/2 teaspoon salt in a medium bowl. Let sit for 5 minutes. Add the julienned apple, chopped cilantro, and minced jalapeño. In a small bowl, whisk together the lime juice and 1 tablespoon olive oil. Pour over the slaw and toss to combine. Serve immediately.
  6. Heat a dry skillet or comal over medium-high heat. Warm each corn tortilla for about 30 seconds per side until pliable and lightly charred. Stack in a clean kitchen towel to keep warm. Assemble tacos with a generous spoonful of shredded venison, a handful of apple slaw, and garnish with extra cilantro and a squeeze of lime. Add sliced radishes or avocado if desired.

Notes

Don’t skip the sear—it builds deep flavor. Braise low and slow at 325°F. Salt the cabbage first to keep it crunchy. Warm tortillas properly to prevent breaking. The braised venison tastes even better the next day; store meat and slaw separately.
