  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1½ teaspoons ground cinnamon
  • 2 tablespoons granulated sugar
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground nutmeg (optional)
  • ¼ teaspoon ground cardamom (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and drain the chickpeas in a colander under cold water.
  3. Dry the chickpeas thoroughly by spreading them on a clean kitchen towel or paper towels. Gently rub to remove any loose skins. Let air dry for 5 minutes.
  4. In a mixing bowl, combine olive oil, ground cinnamon, sugar, salt, and optional nutmeg or cardamom. Whisk until the sugar starts to dissolve.
  5. Add the dried chickpeas to the bowl and toss gently until evenly coated.
  6. Spread the coated chickpeas in a single layer on a parchment-lined baking sheet. Do not overcrowd.
  7. Roast for 20-25 minutes, stirring halfway through at the 10-minute mark. Check for doneness at 20 minutes—chickpeas should be golden brown and firm.
  8. Remove from oven and let cool completely on a cooling rack or plate for 15-20 minutes before serving.

Notes

Dry the chickpeas thoroughly for maximum crunch. Remove loose skins for extra crispiness. Do not overcrowd the baking sheet. Let cool completely before storing in an airtight container at room temperature for up to 3-4 days. Re-crisp in a 300°F (150°C) oven for 5 minutes if needed.
