  • 2 medium carrots, peeled and grated
  • 2 jalapeños, seeds removed if desired, finely diced
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1/2 cup good-quality mayonnaise (e.g., Hellmann’s or Duke’s)
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or agave nectar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Shred the cabbage and carrots using a box grater or food processor.
  2. Optional: Place shredded cabbage in a colander, sprinkle with 1 teaspoon salt, let sit 10-15 minutes, then rinse and squeeze out excess moisture.
  3. Dice the jalapeño and chop the cilantro.
  4. In a small bowl or jar, whisk together mayonnaise, lime juice, apple cider vinegar, honey, cumin, smoked paprika, garlic powder, salt, and pepper until smooth.
  5. In a large bowl, combine shredded cabbage, grated carrots, diced jalapeño, and cilantro. Pour dressing over and toss until well coated.
  6. Cover and refrigerate for at least 30 minutes to let flavors meld.
  7. Before serving, toss again and adjust seasoning if needed.

Notes

For best texture, salt the cabbage to draw out moisture. The slaw improves after a few hours in the fridge. Adjust heat by removing jalapeño seeds or using half a pepper. Fresh lime juice is recommended over bottled.
