  • 4 salmon fillets (about 6 oz / 170g each)
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • 2 tablespoons fresh dill, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Lemon slices for garnish
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. In a small bowl, whisk together lemon juice, olive oil, dill, garlic, Dijon mustard, and red pepper flakes (if using).
  2. Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  3. Place salmon in a shallow dish or resealable bag. Pour marinade over, turning to coat. Marinate at room temperature for 10-15 minutes (no longer than 20).
  4. Preheat grill or grill pan to medium-high heat (400-450°F / 200-230°C).
  5. Oil the grates with a paper towel dipped in vegetable or avocado oil.
  6. Place salmon on hot grill, skin-side down if applicable. Grill for 4-5 minutes without moving.
  7. Flip carefully and grill for another 3-5 minutes, until fish flakes easily or internal temperature reaches 130-135°F (54-57°C) for medium.
  8. Transfer to a plate and let rest 2-3 minutes. Garnish with fresh dill and lemon slices before serving.

Notes

Don’t over-marinate (max 20 minutes) or the acid will start to cook the fish. Pat salmon dry for a good sear. Let the pan get hot before adding fish. Use a thermometer for perfect doneness.
